Thank you for submitting a very interesting question.  I checked the "usual suspect" sources (Almanac of American Politics, Politics in America, CQ Almanac, Official Congressional Directory) as well as a number of pertinent Internet sites (for example, the Brookings Institution's Vital Statistics on Congress), and I did not find a convenient table noting race and ethnicity by Congressional district across the states.  I found any number of places with aggregated numbers, but not a district-by-district breakdown for each state.

Fortunately, if you are willing to invest some time, you can retrieve the information from the ProQuest Congressional database.  The member profile records are tagged by race and ethnicity, and you can retrieve lists for each state.  It is not very convenient, but, again, I could not find a table in which somebody else has already done this particular analysis.
